Sweet potatoes are a good source of fiber.
Most of the “yams” you find for sale in the United States are actually sweet potatoes. Sweet potatoes labeled as yams usually are the softer varieties, with orange flesh, while those labeled as sweet potatoes are often the harder, white-fleshed varieties. True yams are usually only sold in ethnic markets and are drier and starchier than sweet potatoes. Whichever type of sweet potato you consume, it’s a good source of vitamins A and C, iron, calcium, thiamine and fiber smart carbs. Lucky for us, nature has given us the nutritious, delicious sweet potato. This super food gives all the benefits of other high energy foods with more nutrition and without spiking blood sugar. 1. They are high in vitamin B6. Vitamin B6 helps reduce the chemical homocysteine in our bodies. Homocysteine has been linked with degenerative diseases, including the prevention of heart attacks.
2. They are a good source of vitamin C. While most people know that vitamin C is important to help ward off cold and flu viruses, few people are aware that this crucial vitamin plays an important role in bone and tooth formation, digestion, and blood cell formation. Another study of women who had completed treatment for early stage breast cancer conducted by researchers at Women’s Healthy Eating and Living (WHEL) found that women with the highest blood concentrations of carotenoids had the least likelihood of cancer recurrence.
Sweet potatoes contain almost twice as much fiber as other types of potatoes. Contributing close to 7 grams of fiber per serving. The high fiber content gives them a ‘slow burning quality’. Which means their caloric energy is used more slowly and efficiently than a low-fiber carbohydrate.
